Pepper Onion Flatbread with Feta Cheese

Pepper and Red Onion Flatbread with Feta Cheese

Lightly sauteed peppers and onions add a bit of sweetness while the feta cheese brings the savory element. Serves 4 for lunch or cut each flat bread in 4-6 pieces and serve as an appetizer.

Ingredients Method Notes

Ingredients
  

  • 4 pieces flatbread
  • 1 red onion sliced thin
  • 1 red/green or yellow pepper
  • 1 TBS chopped thyme
  • 5 oz. feta cheese
  • 1 TBS olive oil
  • 1 TBS balsamic vinegar

Method
 

  1. Heat 1 tablespoon olive oil in medium skillet.
  2. Add sliced red onion & sautee for 5 minutes
  3. Add peppers, thyme & balsamic vinegar to skillet. Continue cooking for an additional 5 minutes
  4. Place flatbread on cookie sheet.
  5. Top with onion, pepper mixture.
  6. Sprinkle with feta cheese.
  7. Broil on low for 5-7 minutes or until the edges are lightly browned.
  8. Cut & serve.

Notes

Watch the bread carefully after placing in the broiler so it doesn’t burn.
Fresh oregano can be added or substituted in place of the thyme.
